Ingredients
The Greens
- Asparagus
- Water Chestnuts
- Bambu Shoots
- Broccoli
- Green Peas
Meat
- Chicken Fillet
The Sauce & Spice
- White Rice Vinegar
- Sesame Paste
- Hoisin Sauce
- Oyster Sauce
- Chili Garlic Paste
- Chili Paste
- Dark Soy Sauce
- The Hottest chili you can find
Extras (not optional)
- Oil to frie in
- Baking Powder
Don't have Rice Vinegar?
Apple Cider Vinegar will work to but will change the taste slightly
Preparation
Preparing the Chicken
- Cut up the chicken fillet into chunks. The will shrink in the pan so keep that in mind, don’t go to small.
- Pour some Black Soy in a bowl and mix in a little baking powder. Put the chicken into the sauce and make sure to cover it.
- Let it sit for about 40 minutes.
Baking Powder Facts
The baking powder will give the chicken a rubbery outer skin when we frie it. But don’t take to much of it or it will change the taste of the chicken!
In the mean time
- Cook up some rice in your preferred way
After about 30 minutes
- Pour a little oil in the frying pan and fry the vegetables. Fry them until they have some crisp to them
- Put the veggies aside in a container
- Pour the chicken sauce mix into the pan and fry it until a bit of sauce is left in the pan
- Mix in the Chili pastes, Hoisin Sauce, Sesame Paste, Oyster Sauce and a little Soy sauce and even less Vinegar. Be very careful with the vinegar, we only want a SMALL amount.
- Take the vegetables and mix in
- Stir everything on low heat
- Mix in the extra Chilis for extra heat.
Serving
Serve with a side of rice and pour a little soy sauce over it all as a garnish.
